3 large onions (preferably sweet onions)
1/2 cup of all purpose flour
3/4 cup bread crumbs
1/2 tsp pepper (powdered or pepper flakes)
1/2 tsp baking powder
1 egg
1/2 cup milk
Salt to taste
Cooking oil for deep frying
METHOD OF COOKING
- Peel and wash the onions. Cut the onions into 1/4-inch slices. Separate the rounds into rings then set aside.
- In a small bowl, mix in the flour, pepper, baking powder and salt.
- In a measuring cup, whisk in the egg and milk then pour the mixture into the dry ingredients, blend them well to form a batter. Dip the onion rings into the batter, then place on a wire rack to let the excess batter drip off.
- Spread the bread crumbs out on a plate. Place the battered rings on the bread crumbs one at a time making sure to completely cover them well with the bread crumbs.
- The coating should cling well. Deep fry the rings a few at a time then fry for 2 to 3 minutes, or until they turn golden brown.
- Remove then drain excess fat on a paper towel. Sprinkle with a little salt before serving.
Serves 6 to 8 people.
