SIMPLE POTATO OMELETTE

INGREDIENTS.
2 potatoes grated
2 eggs
salt to taste
2 tablespoon cooking oil
black pepper or chilli flakes

preparation
Heat the oil in a non-stick cooking pan. Once hot put in the potatotes, add salt and let it cook for a few minutes while stirring. Add the pepper. Once the potatoes are half-cooked (don't let them get mushy) add the eggs and cover for a few minutes. Turn over to cook on the other side. Serve with a cup of coffee or tea. Bon appetite.
